Apple blitz cake
A soft and creamy cake of German origin.
A quick and easy recipe – blitz means ‘lightning’ in German!

Serves four
- Flour 200 g
- Cane sugar 100 g
- Butter (softened) 60 g
- 2 eggs
- 1 teaspoon of baking powder
- One and a half lemons
- One glass of milk (200 ml)
- 1 tbsp of rum
- Icing sugar to taste

To eat sustainably at each meal, our advice is to keep within 1000 grams of CO2 equivalence (carbon footprint) and 1000 litres of virtual water (water footprint). Method
Wash and peel the apples and cut them up into quarters. Remove the seeds and make parallel cuts without slicing all the way through. Put the apples on a plate and sprinkle them with 50 g cane sugar and drizzle with the juice of one lemon.
Leave this mixture to combine for 30 minutes.
Separate the egg whites from the yolks and whip them with a pinch of salt.
Put the softened butter into a bowl with the rest of the sugar and mix it with a spoon or blender.
Add the juice and zest of half a lemon.
Add the yolks and mix.
Sieve the flour with the baking powder and add the milk and a tablespoon of rum.
Add half of the whipped yolks and mix them in before adding the rest of the whites very delicately, using upward sweeping movements to avoid collapsing them.
Grease an oven dish, sprinkle with breadcrumbs or flour and add the cake mixture.
Arrange the apples on top, pushing them down into the mixture with the cuts pointing upwards.
Brush the apples with oil and sprinkle the remaining cane sugar on top.
Bake in a preheated oven at 180°C on fan mode for around 40 minutes.
Remove from the oven and, when it has cooled, sprinkle with icing sugar.
The Chef’s Advice
The consistency of yellow or red apples are perfect for this type of cake. If they are in season, you can also use pears or peaches instead.

To lower the quantity of sugar in the mixture, flavour can be added to the cake with cinnamon or vanilla extract.
