Barley Croquettes

tasty and sustainable croquettes.

Serves four

  • Pearl Barley or a similar whole grain – 320 g
  • Potatoes – 150 g
  • Onion – 1
  • Eggs – 4
  • Garlic – 2 cloves
  • Cumin to taste
  • Coriander to taste
  • Parsley to taste
  • Sesame seeds to taste
  • White pepper to taste
  • Salt to taste

To remain environmentally sustainable at each meal, our advice is to keep within 1000 grams of CO2 equivalence (carbon footprint) and 1000 litres of virtual water (water footprint). Remember that animal proteins (meat, cheese, fish and eggs) have a greater impact than grains, beans, pulses and vegetables. Vegetable sides generally have a low environmental impact, equivalent to around 100 grams of CO2, including dressing.



Method

Boil the potatoes in their skins, leave them to cool, peel them and mash them with a potato masher. In the meantime, boil the barley in lightly salted boiling water, following the packet instructions.

When the barley is cool add it to the potatoes in a bowl, adding the eggs and chopped coriander, parsley, garlic, onion.

Mix together well, shape into balls with your hands and flatten them slightly. 

Roll the balls in the sesame seeds.

Cook in a pre-heated oven at 200°C for around 20 minutes until they are a golden colour.
