Cannellini bean and radicchio cream soup
A simple yet sophisticatedsustainable recipe.
This delicate cream soup combines the sweetness of cannellini beans with the bitterness of radicchio, which is full of antioxidants and immune-boosting properties.

Serves four
- Dried cannellini beans – 200 g
- Radicchio – 250 g
- Half an onion
- Extra virgin olive oil – 2 tbsp (20 g)
- 1 garlic clove
- Vegetable broth or water – 500 ml
- Salt and pepper to taste
- Parsley
- Wine to taste

Method
Soak the cannellini beans overnight.
Finely chop the garlic and onion and fry lightly in a little olive oil.
Add the wine and then the beans.
Add the broth (or water), season with salt and pepper and cook for around 30 minutes.
Add the radicchio.
When the radicchio is cooked, blend the mixture until it is smooth and creamy.
Add a little parsley and a drizzle of olive oil to serve.

Cannellini beans are well-suited for a range of dishes due to their delicate flavour and because they are easy to digest.

Creams and soups are a delicious way to add more pulses into your diet – we recommend consuming them at least three times per week. Add a slice of bread or vegetable side, and you’ve got a full, well-balanced meal.
