Chicken tagine with rice pilaf
A traditional Moroccan recipe.
A different way to cook chicken, seasoning it with spices and combining it with rice. You will be amazed at the result!

Serves four
- Chicken breast 400 g
- 2 medium-sized onions
- 4 tbsp extra virgin olive oil (40 g)
- Paprika
- Chopped coriander
- Ginger
- Vegetable broth
- 1 sachet of saffron
- Basmati rice 320 g

To eat sustainably at each meal, our advice is to keep within 1000 grams of CO2 equivalence (carbon footprint) and 1000 litres of virtual water (water footprint). Remember that animal protein (meat, cheese, fish and eggs) have a greater impact than grains, beans, pulses and vegetables. Method
Cut the chicken into pieces; peel and chop the onions.
Brown the onions, then add the chicken. Season with paprika, chopped coriander and ginger.
Add a little broth and cook, adding saffron at the end and seasoning with salt.
Rinse the rice to get rid of the excess starch.
Bring 2 cups of water to the boil, add the rice and boil for 2 minutes. Cover with a lid and cook on low heat for about 18 minutes.
You want almost all the liquid to be absorbed by the end of cooking.
Gently fluff the rice with a fork to separate the grains, adding a drizzle of extra virgin olive oil, then mix in with the chicken in a bowl and serve.
The Chef’s Advice
Rice pilaf can also be cooked in the oven in the same way: add boiling water to the rice, cover it with a lid and let it cook until all the water is absorbed.

This dish contains one portion of protein and one of carbohydrates; you can finish off the meal with a side of vegetables, or by adding vegetables such as diced courgettes and carrots directly to this dish.

Reduce your consumption of meat, especially red and processed meats.
Poultry are lower impact protein sources than red meat. To increase the sustainability of the dish, opt for organic or pasture-raised chicken whenever possible.
