Serves four
- 400 g Chicken thigh meat (diced)
- Fresh coriander (chopped)
- 40 g Ginger (finely chopped)
- 40 g Green chillies (finely chopped)
- 400 g Chopped tomatoes
- 500 ml Chicken stock
- 2 cloves garlic (finely chopped)
- 2 tbsp olive oil
- Large onion (finely diced)
- Lime
- 1/4 tsp Cardamom pods
- 1/4 tsp Whole cloves
- 50 g tomatoe puree
- 1/4 tsp Cumin
- 1/4 tsp Ground coriander
- 1/8 tsp Ground turmeric
- 1 tsp Sugar
- 1/8 tsp Salt

Method
Heat oil in a large pan and add the cloves and cardamom pods. When the spices start to sizzle, add the onion and fry until brown.
Add the garlic, ginger, chillies, cumin, ground coriander, turmeric, salt, sugar, and lime juice and stir to form a paste.
Add the chopped tomatoes and mix well so all the paste mixes into the tomatoes. Add chicken stock and allow the whole mixture to simmer for 15 mins.
Add the chicken to the gravy base and half of the chopped coriander and cook on a medium heat for 1 hour.
Add the remainder of the coriander and stir it in, then remove from the heat and serve.
