This recipe’s environmental sustainability level is: High.
To eat sustainably at each meal, our advice is to keep within 1000 grams of CO2 equivalence (carbon footprint) and 1000 litres of virtual water (water footprint). Remember that animal protein (meat, cheese, fish and eggs) have a greater impact than grains, beans, pulses and vegetables. Vegetable sides generally have a low environmental impact, equivalent to around 100 grams of CO2, including dressing.
Method
Chop the almonds finely and mix them with all the other flan ingredients, cold, with a whisk.
Grease 8 oven moulds and sprinkle them with sugar. Pour in the mixture and bake at 190°C for 45 minutes.
In the meantime, make the vanilla sauce by heating the milk with the vanilla pod. In a separate pan, mix the yolks, sugar and corn starch together.
Add the hot milk, put on the heat and thicken without bringing to the boil, stirring constantly.
Turn out the moulds on plates and add the cold vanilla sauce.
The Chef’s Advice
An alternative to the shelled almonds is almond flour. If you like, you can sprinkle a few chocolate flakes onto the pudding.
Nutritional Advice
Pudding has a place in a healthy diet if it is eaten infrequently.
Environmental Advice
Avoid food waste by considering your portion size.
Overeating is not only a matter of weight gain, but also means extra, unnecessary environmental impact. If having a pudding, consider its calorie and nutritional content and opt for a lighter, plant-based meal in order to balance both calories and environmental impact.
