This recipe’s environmental sustainability level is: Very high.
To eat sustainably at each meal, our advice is to keep within 1000 grams of CO2 equivalence (carbon footprint) and 1000 litres of virtual water (water footprint). Remember that animal protein (meat, cheese, fish and eggs) have a greater impact than grains, beans, pulses and vegetables. Vegetable sides generally have a low environmental impact, equivalent to around 100 grams of CO2, including dressing.
Method
Whisk the sugar and eggs in a bowl.
Add the other ingredients and mix into a cream. If too runny, add a bit of flour.
Pour the mixture into a well-greased and floured circular tin.
Bake at 160° C in the middle of a pre-heated oven for around 30 minutes until done.
The Chef’s Advice
For a more intense flavour, add grated orange zest to the mixture.
Nutritional Advice
To lower the quantity of sugar in the mixture, flavour can be added to the cake with cinnamon or vanilla extract.
Environmental Advice
Avoid food waste by considering your portion size.
Citrus peels can be grated into zest as a way to add flavour and nutrients to a dish and avoid wastage.
