Spelt, black olives and blackberry salad
A fresh and fragrant recipe combining grains and fruit in an unusual way.

Serves four
- Pearled spelt (or another whole grain e.g., pearl barley) – 320 g
- Fresh cheese – 200 g
- Blackberries – 120 g
- Good quality black olives to taste
- Extra virgin olive oil – 4 tbsp
- Oregano to taste
- Salt to taste

To remain environmentally sustainable at each meal, our advice is to keep within 1000 grams of CO2 equivalence (carbon footprint) and 1000 litres of virtual water (water footprint). Remember that animal proteins (meat, cheese, fish and eggs) have a greater impact than grains, beans, pulses and vegetables. Vegetable sides generally have a low environmental impact, equivalent to around 100 grams of CO2, including dressing.
Method
Dice the cheese, dress it with extra virgin olive oil and (preferably fresh) oregano and leave it to absorb the flavors.
Rinse the blackberries and dry them carefully.
In the meantime, boil the spelt in salted water (according to the packet instructions), drain and rinse it quickly in cold running water.
Put the spelt in a bowl and dress it with a drizzle of extra virgin olive oil.
Once it has cooled mix the cheese, blackberries and olives together carefully.
